Weekday Whip-Up
A fantastic & healthy fall chili, ready in just 30 minutes....Enjoy!

Pumpkin Turkey Chili

Ingredients
1 tablespoon vegetable oil
1 cup chopped onion
1/2 cup chopped green bell pepper
1/2 cup chopped yellow bell pepper
1 clove garlic, minced
1 pound ground turkey
1 (14.5 ounce) can diced tomatoes
2 cups pumpkin puree
1 1/2 tablespoons chili powder
1/2 teaspoon ground black pepper
1 dash salt
1/2 cup shredded Cheddar cheese
1/2 cup sour cream
1 tablespoon vegetable oil

Directions
Heat the oil in a large skillet over medium heat, and saute the onion, green bell pepper, yellow bell pepper, and garlic until tender. Stir in the turkey, and cook until evenly brown. Drain, and mix in tomatoes and pumpkin. Season with chili powder, pepper, and salt. Reduce heat to low, cover, and simmer 20 minutes. Serve topped with Cheddar cheese and sour cream.

Foodie Heaven...
John and I celebrated his birthday last Thursday at Epcot's International Food & Wine Festival (yes, I am just now getting around to posting it), and had a fantastic time. On second thought, he had a fantastic time, I had a pretty ok time considering that temps were near 90, combined with 80% humidity.


Once I found a street vendor and got myself a ginormous cup of Joffrey's coffee, I was in better spirits.

Norway was our first stop, and happens to be my fave, mostly due to the fact that I'm Norwegian. Uff da!


China was next....

My new BFF Liz and I caught up yesterday to attend a holiday craft bazaar, and though we were a bit disappointed with the gift selection (Liz, you are so going to regret not snatching up that football purse), we still managed to have had a hoot. We also managed to, for the second time, both forget to bring our camera so had no way of chronicling our adventure. Well, except for the delicious and adorable cupcakes she baked me.....

Can't wait for our next meetup!
